As another Mac/iTunes/iPod user here, I have to jump in with a few 
comments. I have used both iTunes and WinAmp on Windows as well. I'll 
say up front that when *I* last used WinAmp, I couldn't stand it. I 
think that was before iTunes for Windows was released.

There are multiple approaches you could use in iTunes to achieve the 
same result, without having to manage the individual data files in the 
Windows Explorer.

In iTunes, as Chris Pelzo said, everything is in your Library. By 
default, the iPod synchs with the Library and with all playlists. 
However, that can be easily changed in the preferences. You can tell 
iTunes to only synch the iPod with one or more playlists. On my family's 
iMac upstairs, the same iTunes library is used to synch with both my 
wife's iPod and with my daughter's iPod Shuffle. My wife's iPod gets 
synched with everything, but my daughter's iPod is only synched with the 
"Emily's iPod" playlist.

Playlists can be manually created and tracks dragged between them, as 
you do with your category folders.

In addition, you can create "smart playlists" which are automatically 
populated according to any criteria you can create using any of the ID3 
properties of the media files. For example, on my system, I have the 
following smart playlists:

- "High School" - all tracks whose release date is between 1980 and 1983.
- "Long Rush Songs" - all tracks by Rush whose duration is > 7 minutes.
- "New Podcasts" - all podcasts whose play count is zero.
- "Christian" - all tracks whose genre is "Religious" or "Inspirational".
- "New Christian" - all tracks in the "Christian" playlist which were 
added to the Library within the past 6 months.

Beyond that, each track has a checkbox next to it in all playlists. 
iTunes can be configured to only synch checked tracks. Thus, while I 
have my iPod synch with everything, I have a "Holiday" playlist whose 
items I can check/uncheck all at once to have them loaded on the iPod 
during the holiday season.
