In my youth (seemingly a couple of centuries ago) I studied wines quite a
bit and had the opportunity to work as/with a wine buyer as a summer job.
That was a great summer job.

I tend prefer wines to harder liquor, except that near Christmas I do make a
large batch of glogg every year (not the wimpy stuff that you read a recipe
for in the newspaper every year that calls for ("a red wine"). Nope, I
start with a good port and add everclear to give it a kick. My dad makes
it too and we compare batches.

Just to pick a nit or two (how often do I get a chance to pick a nit with
you?) Merlot is not considered a very dry red. It is in fact often used
as a moderating wine and often blended into younger cabs to make them
drinkable sooner by taking off the tannic edge. The dryness of a red wine
comes from tannin from the skin. This mellows with age and on a good wine
will fill it with body and substance. That takes time (which is why some
very good reds are put in a cellar for a long time). Merlot will soften a
cab and let you drink it much sooner. You lose some of the body, but most
people don't get to drink a good 25 year old cab anyway.

Rieslings are also generally considered a sweeter grape. In fact *all*
great German wines are Rieslings, and in German wines are in fact rated by
their level of sweetness; with the sweetest wines being better, all the way
up to a Trockenberenauslese. Even the driest mit predikat (Kabinet) wine is
sweeter than many whites.

Carl
