I believe I have mentioned this before on one of my sporadic periods of 
attendance in the echo. My best experience (at an eating venue) of good 
beef debris was at my local Old Country Buffet ... a venue with little 
except quantity to recommend it.

For whatever reasons I had allowed myself to be talked into accompanying 
friends to OCB for the evening meal .. when they have a knife wielder to 
slice off thin strips of beef roast, ham and pork roast.

I went to the "carving station" intending to snag some roast pork - as 
it is usually OK. When I got there a new "steamship round" of beef had 
just been deposited on the beef platter.  So, I waited and watched the 
slicing drone cut the end cap off the beef. 

As she started to deposit it in the ouiblette slot I stopped her and 
said, "Please, put that on my plate."

"But, this is all fat and burnt stuff and we always throw it away" she 
stated.

"Great!" say I. "That's just the part I want. It's actually got some 
flavour." Not to mention some actual beef to go with the fat and crust.

So, I got this nice, almost cover my plate, end cap. And an attempted 
withering look that said more "What size rock did you crawl from under, 
fat boy?!?!" and a put-upon sigh.

As I walked back to my table I noted that the carver's indignation was 
about to increase as the lady behind me at the cutting table asked "Do 
you have any more of that crusty stuff?"

      Title: Deviled Pecan Eggs
 Categories: Dairy, Classic, Appetizers
      Yield: 4 servings
 
      8    Eggs; hard-boiled
      1 ts Yellow mustard
      1 ts Onion; grated
    1/2 ts Salt
      1 ts Vinegar
    1/4 c  Mayonnaise
    1/2 c  Pecans; chopped
 
  Shuck the eggs and with a sharp knife, half them long ways.
  Remove the yellows and fork them around until they are mashed.
  Mix in all the other ingredients and stuff back in the eggs.
  
  Arrange on platter. Don't forget to tape your name to the
  bottom of the dish.
