changes...

     Title: Cream Of Pumpkin And Tomato Soup

  Servings: 4

      2 c  cooked pumpkin
      1 c  pumpkin cooking water
           sugar and vinegar, optional
           salt and white pepper
      1 c  stock
    1/2 c  tomato sauce or pureed
           tomatoes
           cayenne or curry powder, to
           taste
           favourite green herbs, to
           taste
      1 tb fat
      2    ribs celery, diced
    1/4 md onion, diced
      1    to 2 cloves garlic, minced
      1 tb flour and
      1 tb butter or fat with
      1 c  milk or
    1/2 c  light cream

Cook pumpkin by boiling, steaming or baking until rind is soft. When it
has cooled enough to handle, cut into sections lengthwise and fillet the
sections like skinning a fish.

Whiz about 2 cups pumpkin meat in a blender with a little cooking water.
Taste and add sugar and/or vinegar by part teaspoons to taste, to mellow
out any bitterness and sharpen up the flavour. Also salt and white
pepper to taste.

In a soup pot combine pumpkin puree, stock of choice (beef, pork, ham,
chicken, vegetable, your preference) and a modest amount of tomato
paste, sauce or pureed tomatoes, just enough to give a rich reddish tint
to the soup and a hint of tomato taste. Bring to a simmer and add spices
and herbs to taste. Last time, I added 2 tb minced Molokhiya (Jew's
Marrow) leaves which gave it a green speckled look without much added
herbal flavour and a slightly gelatinous broth although it doesn't
thicken as much as okra or sassafras.

Meanwhile sweat celery, onion and garlic in a little fat (beef drippings
pork, ham, chicken, butter, oil, whatever suits you) matching the fat to
the stock used. Add to the pot.

Make a roux and use it to thicken milk; add to the soup at the end. Or
use cream.

Lot's of possible variations:

-sub other squashes
-sub part sweet potatoes
-sub reconstituted dried mushrooms and their soaking juice for the
tomato sauce, and add diced, fresh tomatoes at the end.
-add diced cooked meats or cooked white beans for more protein
-vary the spices and herbs: chipotles and cilantro are nice
-add 1 c corn
-add sour cream
