Hmmm, I'd have thought you'd love pheasant, but not if it's cooked to 
dryness! I think a wild pheasant has the most wonderful flavor, as do most 
game birds. Duck and goose it very much depends on what they were eating. 
The ones around here tend to have a muddy seabirdy flavor that is not nearly 
as good as Eastern Washington ducks and geese who load up on fallen wheat 
in the fields of the Palouse region on their way north in the fall (hunting 
season) and winter. Pigeon Dove and Quail (and huns) taste pretty much the 
same on both sides of the mountains.

Not I, I had them fried and I ate them not by choice at the time. They were 
actually pretty good though, and in a pinch I'd not be averse to having them 
on the plate.

-> 3 oz sliced white onions

-> 1.5 oz chili sauce (hot)

-> Heat and season your wok. Add the meat first. Cook for 30 sec.
-> Add the vegetables along with the Thai basil, cook for another
-> 45 sec. Season with sauces. Deglaze the wok with stock and serve.

Simple straightforward, and it looks pretty good too! I'd probably add a bit of

celery as well.
