Yes, bacon. I love bacon (though I would not miss it if it
left my diet and were replaced by, say, beef). There are those
in this world, probably, who would salivate mightily on seeing
a 6" x 1" slice of steamed zucchini, almost as we would with a
6" x 1" slice of solidified smoked porcine heaven. But I no
longer consort with those types and am doing my best to keep
Carol away from this sad condition (if she were to go veggie,
as her tendencies sometimes take her perilously close) I don't
know what I'd do. Burgers instead of steak, I guess.

In the literature it has been likened to okra in this context.
But I don't see the point of greenness for the sake of green
(in fact, I dislike chlorophyll, which has a nauseating taste
to me, and few greens except spinach have enough character to
cut that taste); nor that of thick for the sake of thick.

Did I ever report on my experience with Japanese steamed okra?
It was this nose-shaped thing that oozed mucus out the other
(non-pointy) end. Very cool, but though I like okra well enough,
I had a hard time downing it.

      Title: FILLET OF DARLING DOWNS BEEF w PEPPERED RASPBERRY ONION
 Categories: Aussie, Beef, Restaurant
      Yield: 4 Servings

      4    Beef, butt fillet steaks,
           -at least 2.5cm thick,
           -trimmed of all fat
           -and sinew.
      2 tb Oil, olive
           Salt
           Pepper
      1 kg Onions, Spanish
      4 tb Vinegar, raspberry
      2 tb Peppercorns, pink
      1 c  Sugar, castor
      4 lg Leeks
      1    Sweet potato

  Brush the beef with olive oil and season, cover and refrigerate. Peel
  and slice the onions, place in a large saucepan with raspberry
  vinegar, remaining olive oil, peppercorns, castor sugar and cover
  with water. The onions should be cooked slowly over a moderate heat
  until the liquid is reduced by three quarters and the onion is very
  soft. Cut the leeks and sweet potato into thin straws, deep fry and
  drain on absorbant paper. Reserve for garnishing.

  Heat the griddle pan until just smoking, place the beef on the pan
  and cook until sealed, turn and continue cooking until medium rare
  [or to your liking]. Place the fillets on plates and spoon over the
  raspberry onions.

  Garnish with the mixture of deep fried leeks and sweet potato. Serve
  with seasonal vegetables.
