 DS> 1. Corn chips.  They have their uses, I guess, but I rarely eat

Corn chips are pretty much a waste of time, especially the
fat-free variety; a friend gave me some of these before a
concert the other day with the preface, "would you like
some very mediocre chips?"

I'll maybe eat Doritos, with their corn syrup, MSG, and whey;
and sometimes I have a perverse fondness for foods of the Cheez
Doodles family; but these all are constructions with little to
remind one of the raw materials from which they are made.

 DS> 2. Corn bread.  I like corn bread, so that's OK.  I'm less fond of
 DS> those heavy little cornmeal cannonballs, "hush puppies."

I can do without cornbread. I can do without hushpuppies,
though if they're fried for a sufficient amount of time in
sufficient amounts of sufficiently hot pig fat, they can
be edible.

 DS> 3. Sprinkled on a baking pan to keep bread from sticking.  Use just
 DS> the right amount, and the effect is very nice.  Use too much and
 DS> it's like someone rolled your bread around on the beach.

I'm not too fond of this - too often the result is like what
you describe too too well. Sometimes cornmeal as a frying medium
is not too bad, but generally here too it is too sandy.

 DS> 4. Cleaning out clams.

Failure. I've long since quit doing this. If there's any
effectiveness, it must come from the clams trying the stuff
and then puking their guts out.

 DS> 5. Scrapple.  If cornmeal were used for nothing but scrapple, it
 DS> would be sufficient reason to continue milling corn.
 DS> 6. Fried mush.

True on both counts, I admit; but in both cases it's the
crisp frying and the FAT that causes the food to be good.
Of course, with scrapple, the presence of pig parts
improves the picture quite a bit.

Ah. You learn something new every day. Okay, Cracker Barrel is
off the list, Kym Herron (RIME Cuisine person) notwithstanding.

Fried oysters with pickled-vegetable relish
cat: main
servings: 4

h - pickle
1 c water
1 c cider vinegar
1/2 c sugar
1 Tb salt
1 Tb pickling spice
h - 4 c vegetables to taste
red pepper, sliced thin
onions, sliced thin
carrots, sliced thin
cucumbers, sliced thin
radishes, sliced thin
green beans, julienne
few dried hot red chile peppers, opt
h - for cooking
whole garlic cloves
oil
h - oysters
24 shucked oysters
1 c cracker meal
1 c white cornmeal
s, p
peanut oil for frying
tartar sauce, opt

Bring pickle ingredients to a boil. Cool to room temp.

Saute vegetables lightly with garlic cloves in a little oil.

Pour pickle over vegetables and refrigerate overnight.

Combine the cracker meal and cornmeal. Season generously.
Coat oysters and fry in batches at 375F until outside is
golden brown and crisp, less than 2 min.

Serve oysters garnished with vegetables and tartar sauce.
