->   Place the coconut milk, broth and ginger in a small soup pot and
->   simmer over moderate heat about 5 to 10 minutes.  Add the green
->   onions, lemon grass, chicken and chili pepper and simmer an
->   additional 5 minutes.  Taste the soup; add more chili pepper if
->   desired.  Remove the ginger and discard.  Stir in the lime juice and

A wonderful recipe! One that I often make with a few small differences, first I

thin the coconut milk down with chicken stock at about a 4:1 ratio, I use a 
smaller chunk of ginger diced fine rather than one large chunk that I'd remove.
And I also add (as do most tom kha gai recipes I've had in restaurants) 
several thickly sliced mushrooms....and of course since Anne would be eating 
it as well...no heat, I'd add a little diced chile pepper to my bowl or a spoon

of sambal olek (more likely) 
When I first "discovered" this dish, I would often add a can of coconut milk 
and lime juice to other dishes and boy is it a flavorful addition to a lot of 
different dishes! Try adding it to a  regular chicken stew sometime!
