Depends on how thorough. I did some pork slices for 1.5 minutes
today, and they didn't get much of a warmed-over flavor. I might
repeat the experiment with 3 min, but then the food would be sure
to be tough as shoes, so I am not eager.

It's not as though it's an essential skill, but I do
maintain that the capacity to eat hot food improves
quality of life by some small margin.

Vidalia Deviled Eggs
cat: starter
yield: 24 halves

12 eggs
1/2 c mayonnaise
1 Tb butter, softened
2 ts Dijon mustard
1/2 ts Worcestershire sauce
1 Tb cornichon, finely minced
2 Tb Vidalia onion, finely minced
1 ts Colman's dry mustard
1/8 ts cayenne pepper
1/8 ts sugar
1 Tb La Chinata smoked paprika
salt and freshly ground pepper to taste
2 sl country ham, cooked then minced (opt)

Jeffrey Buben uses duck eggs from the Dupont Circle
farmers market, but chicken eggs also work well.

Cover the eggs with cold water in a large saucepan and
add 1 Tb salt. Bring to a boil over high heat, then
remove the pan from the heat, cover, and let stand for
10 min. Shock the eggs in cold water, then peel them. S
plit the eggs in half and remove the yolks to a bowl.
Using the back of a fork, mash them with the mayonnaise
and butter until smooth. Add all remaining ingredients
but paprika and ham, and mix well. Season with salt and
pepper. Fill a pastry bag with the yolk mixture and pipe
into the hollowed whites. Top with the minced ham and a
sprinkle of paprika.
