I used to kind of like the stuff, but now I find that
the pepper and eggplant combination multiplies the
bitterness, and the zucchini is almost necessary to
counteract that. But as I don't care for zucchini, I
don't make it any more at all. When I make eggplant,
I tend to pair it with onions.

Right. And who knows when the updating of the site
happens, if indeed it happens at a regular time.
I'm suspecting the updating authority was either in
Europe at the time or just decided to get things
done a hair early.

I was wondering if anyone remembered her talking about such a Steve.

Interestingly, things are evening out, and my fondness for
eggplant comes and goes, while my feeling about zucchini has
been oscillating between that true white-hot hatred and a
mere mild intolerance.

At least 4. I used to chuckle at people using hot pepper as an
example of why not to use the fraction characters: you know,
oh, some systems misinterpret the characters and translate them
to whole numbers, so 1/2 becomes 2 ... and how horrible it would
be if you put in 2 ts of cayenne instead of the 1/2 called for!
And I would go, yeah, right, what's wrong with 2 ts of cayenne?

Almond Pear Cake
cat: dessert
Serves: 6

1 c diced almond paste, room temperature
4 eggs, with 1 Tb egg whites separated
1 c sugar
1 pn salt
9 oz butter, room temperature
1/2 c sifted cake flour
2 c sliced almonds
1/4 c light brown sugar
3 Bartlett pears, peeled, 1" dice
- tossed in a squeeze of lemon juice
Vegetable oil spray as needed
Flour as needed

Preheat oven to 325F.

Place the almond paste and 1 Tb of egg whites in the bowl
of an electric mixer. Mix on low speed until smooth. Add
the sugar and salt and mix until blended, scraping the
sides of the bowl with a spatula. Add 7 oz of butter in
three batches, then increase the speed to medium and mix
until the batter is light and fluffy. Add the eggs one at
a time and continue mixing until incorporated. Remove the
bowl from the the mixer and, using a spatula, fold the cake
flour into the batter.

In a separate bowl, mix the sliced almonds, brown sugar,
and 2 oz butter to make a streusel topping.

Spray a medium baking pan with vegetable oil, then lightly
dust it with flour. Pour the batter into the pan, evenly
sprinkle the streusel mixture on top, and arrange the pears
on top of that. Bake 25 to 40 min on the oven's center rack
until the top is golden-brown and springs to the touch.
Allow the cake to cool completely.

Serve with whipped creme fraiche and creamy caramel sauce.
