First off, thanks for coming back and giving us an update! I tried for years to

get my daughter to do that....and she's yet to make her first appearance! For 
years we (all of us here in the echo) have been kept up to date (somewhat) 
on your growth and development by your dad. (I did the same thing with my 
daughter as well) so we all sort of feel like you're "family" and are
interested 
in hearing how you're doing (and we cheer for you as well!).

-> It's a nine month course, followed up by a paid half year (I think)
-> externship to a bakery in the area. And I'm pretty excited about it, as
-> well as a little disappointed. I really wanted to find a school that taught
-> how to become a confectioner, because I’ve found that I’m really fond of
-> making candy, but the only one that came relatively close was
-> Johnson-Wales...which is more expensive than I could afford by a long 
shot. 
-> 
Sounds really interesting! I'm not terribly fond of baking myself, but my wife 
Anne and my daughter Amanda are!

-> I went in two weeks ago over break for an interview, which went well, and
-> now that my friend Peter is back from a service trip to Mexico(!), I'm
-> going to call back so that he and I can arrange a date to go in to fill out
-> a few forms as well as take their standardized test - like an SAT, testing
-> our general knowledge about academic stuff, so that they know where we
-> place among the other applicants. The whole form filling/test taking
-> portion is followed by a dinner in the school's exceptionally nice dining
-> room, made by the advanced culinary students. (It's the program I opted 
out
-> of, because I don't want to learn how to be a restaurant-style chef.) And,
-> from what I've learned from the students there that I got to talk to (who
-> were all very nice), getting in is tougher than I may have thought.
-> However, since the test is almost no math and mostly common 
sense/critical
-> thinking, I don't think I'll have a problem placing high up there. And if I
-> don't get in, that's all right, too. I'll wait out the nine months and try
-> again for the next cycle of pastry classes, unless I find a school that

-> told me that they do include a lesson or two on chocolate making. It's

If you don't get in this "cycle" will you look at trying to find a job in a
pastry 
shop somewhere? Are you going to start to produce and sell your truffles on 
your own? I'm sure you have LOTS of friends to experiment on! If you run out 
you can ask your dad for a list of additional prospects from here! 
(grin)....Hmmm a career in chocolate....life could be a lot worse!
