Depending on what I'm cooking, I'll sub in apple or grape juice or a
broth, usually beef or poultry.  Yes, there's a slight flavor difference
but it deals with the alcohol question rather well.  If only a small
amount of alcohol is called for (a couple of tablespoons or less), I
will just leave it out and add a bit more of whatever other liquid (or
water if it's something like soy sauce which is high sodium) to make up
for it.

BTW, Sean, I understand you "met" my other half, Steve (Stephen) on
another echo; I told him that we'll get to meet you and Maura in person
in Baltimore.  I think he's looking forwrd to it.
