It runs contrary to lots of kinds of thinking, not just current USAian.
Capybaras and waterfowl as permissible for Friday consumption (Catholic,
various places)? Eating meat okay, if you didn't kill it yourself
(Buddhist, various places, particularly Thailand)? A religion whose
strictures cut against strong human impulses are likely to provide a
way out for those who can afford them.

In principle I agree with you, if your high authority tells you not
to do something, you don't do it. The Catholic act of contrition
ends "I firmly resolve with the help of Thy grace to sin no more
AND TO AVOID THE NEAR OCCASION OF SIN." Strikes me that avoiding
the near occasion of sin encompasses not eating capybaras when meat
is forbidden, but I didn't make, and don't interpret the rules.

Do you have any Conservative or Orthodox Jewish friends? They make
a surprisingly convincing argument for obeying the letter of the law,
one that perhaps adherents to other strong religions would agree
with. In essence, obedience for the law is first and foremost obedience,
i.e., the littling of the self before a larger and more important
entity. The law is secondary, but one chooses one's society based on
the laws with which one finds moral resonance. The Book says seething
the kid in its mother's milk is an abomination? Pfoof, you don't eat
Stroganoff, no more said. Unless it be seitan Stroganoff or something.

A more principles-based philosophy such as yours (or, mostly, mine)
puts a lot of responsibility on the shoulders of the holder; further,
it is less conducive to the running of a large society, where allowance
for flexibility would take up a disproportionate amount of resources.

There are other reasons, in our market and in the western European,
in my experience, for dietary restrictions. There is real concern
about taking sentient life for one's pleasure and for the amount of
environmental impact a steak has had versus that of a hunk of tofu.
Not to mention the worry of putting animal fat into one's system
(a worry I don't share). So in my view there's a legitimate reason
for Morningstar Farms Grillers: I'd say to them, if you like
hamburgers and can't maintain your horrid vegetarian lifestyle
without them, fine, go for it.

Elderflower cheesecake (sambocade)
cat: dessert, historical interest
servings: 8

9 in uncooked pie pastry
3 Tb dried elderflowers
4 Tb heavy cream
1/3 c sugar
1/2 lb farmer's cheese
1/2 lb ricotta
2 ts dry breadcrumbs
6 lg egg whites
- beaten stiff but not dry

Prebake crust at 425F for 10 min. Cool.

Soak flowers in cream 10 min. Add sugar
and stir until dissolved

Strain cheeses and combine with flower-cream
mixture and breadcrumbs. Fold in egg whites.
Pour into crust and bake at 375F for 50 min
or until just firm. Turn off heat and let
cool in oven with door open for 15 min.
