What was Mr. Bill thinking? On this computer I forcibly
removed the Windows key; other keys, the e, 7, and -,
ran away in protest.

It'll be a while, even though our concerto competition judges
(Jura Margolis, Paul Badura-Skoda, Ignat Solzhenitsyn, and
Tamas Ungar) awarded prizes to young students instead of the
more accomplished musicians who offered the first Prokofiev
and third Bartok concertos: this means that we have to learn
only the Rachmaninov 2nd, Beethoven 4th, and Tchaikovsky.
Got the music last night for the first two, the Tchaikovsky
gets handed out at rehearsal this morning if they've managed
to get a set of parts overnight. Concert's tomorrow. Some of
the orchestra are kind of stressed about learning 3 concertos
(concerti) in this short span; I'm not. If it were Bartok,
I might be. But for the next few days, busy busy busy.

If the waiter wanted to get a commission on bottles, you mean.

Wellll ... numbering the bottles is a good indication of
expensive quality. It is still hit-or-miss whether top will
be congruent with expensive. Not completely random, as if a
customer has spent lots of money s/he has higher expectations
and more incentive to go off angrily on the seller in case of
major disappointment.

I was joshing with the principal viola of the orchestra:
he'd had the pleasure of telling us that one of the board
members had just given $1000 to the local radio station
so tomorrow's concert would be flogged every hour until
then, and he mused:

  Gee, I'd happy if I just had a dollar.

So I whipped out my wallet. (I like to provide happiness,
especially if it comes cheap.)

Make something up.

Delicious dish
cat: delicious, made up
Servings: 1

20 g butter
2 shallots, minced
100 g mushrooms, sliced
salt
150 mL stock
50 mL cream
50 mL extra-old semi-oxidized white wine
15 mL tomato concentrate
1/2 ts mixed herbs: savory, thyme, sage
150 g chicken breast, sliced diagonally
- into 5 x 5 cm x thin sheets
butter
salt, pepper

Bring butter to the foam. Wilt shallots in butter.
Add mushrooms and raise heat to high. Sprinkle with
salt. Stir-fry until juices are released. Remove with
slotted spoon and keep warm. Add liquids, tomato, and
herbs to pan; bring to the boil. Add chicken breast
to pan. Swish around in the hot liquid, taking care
that the liquid never returns to the boil. As soon as
the meat turns a nice whitish color on the surface,
remove it with a slotted spoon and keep warm.

Reduce liquid over high heat to a thick sauce. Strain.
Add a knob of butter. Correct seasoning. Strain over
chicken and mushrooms. This dish works best with
free-range salmonella-free chicken, and I'd make it
only if the chicken were free. Measurements are always
approximate. The dish should work pretty well. The only
innovation is the strange poaching technique.
