  True, and if you come to visit us some day then we'll let you save
  some.   Actually, the paper towel comes out with enough bacon fat in
  it to almost be edible.   It is stiff and if you closed your eyes ....

      Title: Pannir / Homemade Cheese
 Categories: Cheese, Indian
      Yield: 1 Servings
 
      2 qt Milk
    1/2 c  Unflavoured yoghurt
      2 tb Fresh lemon juice --
           Strained
 
  In a heavy 3 - 4 quart saucepan, bring the milk to a boil over high
  heat. As soon as the foam begins to rise, remove the pan from the
  heat and gently but thoroughly stir in the yoghurt and lemon juice.
  The curds will begin to solidify immediately and separate from the
  liquid whey.
  
  Pour the entire contents of the pan into a large sieve set over a
  bowl and lined with a double thickness of cheesecloth.  Let the curds
  drain undisturbed until the cloth is cool enough to handle.  Then
  wrap the cloth tightly around the curds and wring it vigorously to
  squeeze out all the excess liquid.
  
  Place the cheese, still warpped in the cheese cloth, on a cutting
  board and set another board or large, flat-bottomed skillet on top of
  it. Weight the top with canned foods, flatirons, heavy pots or the
  like, weighing in all about 15 pounds, and let it rest in this
  fashion at room temperature for 6 - 8 hours, or until the cheese is
  firm and compact. Unwrap the cheese, cut it into 1/2 inch cubes,
  cover with wax paper or plastic wrap, and refrigerate until ready to
  use.
  
  This makes 1 - 1 1/2 cups of cheese cubes.

      Title: Saag Pannir / Spinach With Homemade Cheese
 Categories: Cheese, Indian, Main dish, Vegetable
      Yield: 6 Servings
 
      1    Inch ginger root, peeled --
           Coarsely chopped
      3    Garlic cloves -- peeled
      2    Fresh green chiles --
           Coarsely chopped
      2 c  Pannir -- cubed
      6 tb Vegetable oil
      2 ts Coriander seed -- ground
     20 oz Fresh spinach, washed --
           Finely chopped
    1/2 ts Garam masala
    1/2 ts Salt (to taste)
      3 tb Cream
 
  1.  With the motor running in a food processor fitted with a steel
  blade (or in a blender), drop in the chopped ginger, garlic cloves
  and chiles. With the motor still running, add 1/8 to 1/4 cup water
  (enough to facilitate blending) in a thin stream and blend until you
  have a fine paste.  Pour this paste into a small bowl and set aside.
  
  2.  Heat the oil in a heavy pot.  Saute the pannir cubes in hot oil
  over a moderate heat, one layer at a time, turning them until they
  are golden brown.  Remove the lightly browned pannir and set aside.
  
  3.  In the remaining oil, stir and fry the ginger/garlic/chile paste
  for 1 minute.  Add the ground coriander, stir-fry another 30 seconds.
  Fold in the spinach, folding and cooking for another 3 minutes.
  Lower the heat until the spinach is simmering gently and cover.  Cook
  for 15 minutes. Turn spinach occasioanlly for even cooking.
  
  4.  When the spinach is cooked, add the garam masala, salt, pannir and
  cream.  Bring to a gentle simmer again, cover and simmer another 5
  minutes.
  
  NOTES : Pannir is usually cubed and gently sauteed until it becomes
  golden prior to combining with other ingredients.  This helps it to
  keep from falling apart during cooking.  But beware - the moisture in
  the cheese causes it to sputter madly while sauteing, so have a
  lid ready!
  
  This dish can also be created using any other available vegetable
  green either individually or in combination.  The greens can be
  pureed or coarsely choped.
