Ärende: The Great Wasteland
===========================
On 04-19-07 DAVE SACERDOTE Scribbled to DAVE DRUM about The Great

DS>DS> Anyone who can open a can and heat up processed cream of mushroom
DS>DS> soup can as easily whip up a quick and delicious real bechamel
DS>DS> in about the same amount of time.

DS>DD> Beg to differ . . . Nor do they want to spend the half
DS>DD> hour or so it takes to make a proper Béchamel

DS>You infer here:

DS>DD> Sitting on hands and not making biting "food snob" comments.

DS>...that I'm a "food snob" when you quote the most laborious
DS>and complex recipe for a supposedly "simple" bechamel sauce
DS>I've ever seen. Here, try this one:

DS>1. Cut a piece of butter about an inch and a half long off the
DS> stick and melt it in a small saucepan.

B<--- SNIP --->8

You said (just to review)

DS>DS> Anyone who can open a can and heat up processed cream of mushroom
DS>DS> soup can as easily whip up a quick and delicious real bechamel
DS>DS> in about the same amount of time.

And you missed the entire point of my reply - which is that it is NOT as
quick to make a Béchamel (even a roux thinned with milk as you suggest)
in the same amount of time as opening and heating a can.

And it was a snobby comment on your part.

DS>As for Sandra Lee, I don't cook by dumping canned crap together
DS>and spending more time on "tablescapes" than at the stove or
DS>by making sure my unused appliances match my outfits. I can't
DS>picture Weller cooking that way either, and come to think of it,
DS>I never got that impression of you, either.

I don't cook that way either - but, I DO take shortcuts using canned
soups, Bisquick, etc. ... sometimes. Anyone who has seen my kitchen (and
my not so perfect bod/attire) knows that I don't waste much time on my
immediate environment.

DS>So, if that makes me a "food snob," fine. I am. Be happy about
DS>it. That means there's more canned cream of mushroom soup for you.

It doesn't make you a "food snob". But, you did make a "food snob" sort
of comment. Not to mention used a specious comparison. Had you cited
buerre blanc or Hollandaise as the sauce - those I can make in damned
near the time it takes to find the can opener and heat a can of soup.

Oh, and I don't always use CoM soup, either.

I will continue to defend Ms. Lee (and Emerdog) both of whom you roundly
condemn out of hand. I watch both of their shows from time to time and I
generally come away with something I can use from watching ... once you
get past the schtick the shows are quite informative - sort of like
Alton Brown ... whose hokum I put up with to get to the educational
parts of the show.

I takes me learning where I find it. People who have closed minds and
can't do that have my sympathy.

MMMMM----- Recipe via Meal-Master (tm) v8.06

Title: Sour Cream Chocolate Chip Cookies
 Categories: Cookies, Desserts
      Yield: 60 Cookies

      1 c Shortening
  1 3/4 c Sugar
      2 Eggs
      2 ts Vanilla extract
      1 c Sour cream
      1 ts Baking soda
  4 1/2 c All-purpose flour
      2 ts Baking powder
    1/4 ts Salt
      2 c Chocolate chips
      1 c Chopped pecans

Another chocolate chip cookie variation, and this one's
  a winner.

  Preheat oven to 375°F.

Sift together the dry ingredients, and set aside. Cream
together the shortening and the sugar. Add the eggs, one
at a time, beating well after each addition, and add the
  vanilla and sour cream.

Gradually add the dry ingredients to the creamed mixture.
When mixed well, add the chocolate chips and pecans.

Drop by teaspoonfuls onto an ungreased cookie sheet. Bake
  at 375°F for 12 to 15 minutes.

Makes 5 to 6 dozen cookies.

Note: If you like your cookies more chewy than crispy, put
a piece of ordinary bread in with your cookies in an airtight
container. I usually divide my batch of cookies, making
one-half chewy (with bread) and one-half crispy (no bread).
