Well that's one way of preparing them...but I prefer to do it the old fashioned

way, toss em live into a pot of boiling seawater and fish em out in a few 
minutes and serve em hot to echo friends sitting around waiting for em (grin). 
Serve em hot with melted butter and sourdough bread and you don't need 
much else! Good wine would be fine but the last two echo picnic's I hosted 
we cooked em right on the shore of Puget Sound in a park, so no alcohol was 
allowed. If we had known you were so close, we'd have made SURE you were 
invited!
