You are quite right; they are strong and objectionable, not pale. [g]

I don't think highly of it, or other fish roe for that matter.


MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Paella Cubano
 Categories: Cuban, Lobster, Chicken, Sausage, Tuna
      Yield: 6 Servings
 
    700 g  Lobster meat; cook/cubed
    900 g  Chicken; in 6 pieces
      1    Chorizo sausages; sliced
    225 g  Tuna steaks;cook/boned
     10 sm Clams; scrub/steamed
    175 g  Prawns; shelled
    175 g  Prawns; unshelled
      1 md Onions; sl thin
      1    Garlic cloves; sl fine
      3    Tomatoes; blanch/skin/chop
    175 g  Red beans; pre-cooked
      2    Limes; juice of
      1 lg Capsicums- red; seed/chop
      1 lg Capsicums- green; seed/chop
    350 g  Rice- long-grain; pre-soaked
     30    Minutes
    1/4 ts Saffron strands;, soak in
    125 ml Water; warm, 30 minutes
      1 ts Salt
    1/2 ts Black pepper
      1 ts Paprika
      2 tb Olive oil
    570 ml Coconut milk
        pn Nutmeg
 
  Some ingredients have to be pre-cooked.
  
  Heat oil in large pan over moderate heat and add chicken and
  chorizo. Fry, turning regularly, for 15 minutes until the
  chicken is browned. Remove meat from pa n, fry onion and garlic,
  until onion is soft. Add tomatoes, peppers, salt, paprika,
  pepper, and lime juice. Cook for 10 minutes, stirring until thick.
  Add rice, and cook for about 3 minutes, shaking the pan regularly.
  Pour in the coconut milk and saffron water mix, stirring slowly.
  Reduce heat and add beans, chicken pieces and chorizo. Cook for
  15 minutes, stirring occasionally. Add lobster, clams , prawns,
  prawns, and fish. Cook for about 5 minutes until liquid has been
  absorbed. Sprinkle over with nutmeg, and serve piping hot.
