  Speaking of there is a negative critic for every place -- a person I
  work with at times lives on the water in Annapolis.   He is the one
  who recommended Cantler's.   I asked him about Mike's and his response
  was that in summer parking might be a problem -- and not to eat
  anything other than the crabs!   Seems he got some bad oysters once.
  Funny how we all build reactions about various places.   Makes one
  wonder how to figure it all out.

  Good point.   I had asked Dave Drum if she could negotiate steps or
  not, but have not heard back.

      Title: Curried Chicken Rotis--Part 1 (Roasted Curry Paste)
 Categories: Chicken, Indian, Appetizers
      Yield: 4 Servings
 
    1/4 c  Shallots, chopped
    1/4 c  Garlic, minced
      1 tb Fresh ginger, peeled and
           -minced
      4    Jalapeno peppers, seeded and
           -finely
           -chopped
      1 tb Curry powder (preferably
           -Madras
           -brand)
    1/2 ts Cumin, ground
      1    Anchovy fillet packed in oil
           -drained
           -and chopped
      2 tb Peanut oil
      1 tb Sugar
    1/2 ts Salt
 
  PREPARE THE CURRY PASTE:  In a sheet of aluminum foil, wrap the
  scallions, garlic, ginger, and jalapeno peppers.  Seal well.
  
  Place the package directly on a gas or electric burner set on
  moderate heat and cook until fragrant, about 1 minute per side,
  turning with tongs.  Allow the package to cool.  Unwrap and
  transfer the contents to a spice grinder of blender.  Add the
  curry powder, cumin, and and anchovy.  Process the mixture into a
  paste.
  
  In a small skillet or frying pan, heat the peanut oil.  Add the
  paste and stir-fry until brown and fragrant, about 3 minutes.
  Stir in the sugar and salt.  Transfer the paste to a small
  container.
