  As I said, except for meatloaf 80 is far too much fat and shrinks too
  much for our tastes.   As to where it comes from, I'd suspect that
  beef is beef and fat is fat -- and they simply mix what ever is handy
  to get the appropriate mix.   We used to make our own ground beef by
  buying big hunks of top round and grinding.   I think it came out with
  less than 7% fat, and sometimes was a bit too lean.   The 93% stuff we
  buy now does just fine -- shapes nicely, holds together, and tastes
  right (for us).

  He goes there every third Thursday for lunch with a group of guys he
  used to work with.   He was just there last Thursday.  I'd asked him
  to try to get me a menu since they don't have a web page.   They did
  not have any available for him to take away.   He reported that the
  fish was not quite as good as previous -- less fish, more breading.
  Its a bit far for us to go without good reason, but if you ever do
  give it a try let us know what you think.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Potato and Onion Koora
 Categories: Indian, Vegetables, Ceideburg
      Yield: 6 servings
 
           Stephen Ceideburg
      4 md Potatoes, peeled
    1/2 ts Turmeric
      1 tb Corn oil
      1 tb Chana dal
      1 tb Urad dal
      2    Dried red chiles, broken
           -into pieces by hand
      2 ts Mustard seeds
      1    One-inch cube fresh ginger,
           -peeled and minced
      2    Fresh green chiles, minced
      1 lg Onion, thinly sliced
           Salt to taste
      1 ts Fresh lemon juice
 
  Cut potatoes into 2-inch cubes, boil until tender and drain. Add half
  the turmeric and mash lightly with a large fork. It should still be
  quite chunky. Keep warm.
  
  Heat oil in a medium saucepan or skillet until hot. Turn heat to
  golden, add ginger and fresh green chiles. Stir for 3 minutes.
  
  Add sliced onion, salt and remaining turmeric. Cook until onion is
  soft and transparent. Add a few drops of water if mixture looks too
  dry. Add to potatoes and mix well. Add lemon juice. Serve warm.
