Such places (I first wrote "palaces") as the Hyatt have a reputation
for faultless food which would be besmirched by even one report of food
poisoning.  The prices they charge are high enough to cover the cost of
wastage of quality food, so the accountants are kept happy, but it
still seems that there should be some way of using the unconsumed food
from the buffet bar.  They don't even re-work good meat into other
dishes, as I would sometimes do with left-overs.

In Tokyo there is a group of "box people" who live on the streets and
sleep in cardboard boxes in corners in railway stations and the like,
and they live on hand-outs given them from the back doors of high-class
restaurants and hotels.  They dine very well!  That system seems to
work, and they don't sue.   There was a wonderful Japanese movie,
"Tampopo" made a few years ago which covered that sub-culture, and
included the preparation of a meal by one of the itinerants for his
friends, in a hotel kitchen, in the time it took security guards to
respond to the alarm which was triggered by their entry.  That movie
also included such diverse characters as a truck driver helping a
friend to discover the recipe for the perfect noodle soup, and a
gangster who did interesting things with a live prawn on his
girl-friend's body.  Definitely recommended if you can find it.

      Title: Arno's Thai-Style Broth
 Categories: Soups, Hangover, Advertiser
      Yield: 4 servings
 
    600 ml Stock- chicken
           Chicken- breasts; sliced
      3    Cherry tomatoes; >4
      2    Mushrooms; >3
      1    Carrots; slivered fine
           Beansprouts; scant
           ;handful
           H- cilantro
      1 ts Soy sauce; light
           Chillies OPT
      1 ds Chilli oil
 
  Bring the broth to the boil & add the carrot & cxhicken. Lower the
  heat & add the tomatoes & mushrooms, along with the soy sauce, fresh
  chilli & chilli oil.
  
  Simmer till the tomatoes are soft & blousy. Add the beansprouts &
  keep on the stove till the chicken is cooked. Add the coriander &
  serve.
