DS>  to be Hollandaise.  Did I mention the excellent oysters yet?

Chances are it was from a #10 can. I did a deal at a buffet one fine 
Sunday where they had an egg mechanic making omelettes and doing sunny 
side up or over easy eggs. I asked and he didn't understand "basted".

He asked me if I had tried the Eggs Benedict and if I liked his sauce. 
When I offered the opinion that steam table Benedict sauce pretty well 
sucked the egg mechanic said "If you think you can do any better ... "

He shouldn't have said that.

I was back in the kitchen, having found eggs, butter, lemon, a nice 
heavy aluminum pan, a stainless bowl to use as a bain marie and a whisk. 
Just humming along making REAL Hollandaise when I got interrupted by 
this large lady wanting to know "Just what the flying hell are you doing 
in MY kitchen?!?!?"

So, I explained myself. And she poked a finger into my sauce, sucked it 
clean and offered me a job. Which I declined.

Then she asked if I like to see where "Spike's" Hollandaise came from. 
And pointed to a Golden Age can in the 30 gallon bin.   Bv)=

AFAIK you'll never find real Hollandaise on a steam table as it will 
either clabber or break ... neither of which is pretty - or tasty.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Connetta Boyle's Cole Slaw
 Categories: Salads, Slaw, Cabbage
      Yield: 10 servings
 
      1    Head cabbage; shredded
      1 lg Onion; chopped
      1    Green bell pepper; chopped
      3 oz Can pimientos
    1/2 c  Bee's honey
    1/2 c  Apple cider vinegar
    1/2 c  Cooking oil
      2 ts Sugar
      2 ts Salt
 
  Mix together the cabbage, onion, pepper and pimiento. Combine
  remaining ingredients in a pot and bring to a boil. Pour the
  dressing over the cabbage mixture and mix well. Cover and
  refrigerate for 3 days.
  
  Careful when you take the lid off, 'cause sometimes it'll
  stench like old feet.
  
  Serves 10
