The enzymes stay active, and the amount of lactose is said to
go down to eventually approximate zero. Cheese has to age for
a few years before the level is low enough not to grep me, and
still I take my pills just to be safe.

Your idea of Asia coincides with that of the geographers. The
use of Asian that I referenced is a more cultural thing, common
to Britain but becoming more widespread elsewhere as well.

Oriental I believe has an exclusively cultural implication (that
is, there is no geographical relevance to the term). It is sort
of funny that Oriental has acquired a generally negative connotation
whereas Eastern (which means the exact same thing) appears to have
a more positive one.

Medoc refers to the peninsula between the Gironde river and the
Atlantic, in the area called Bordeaux. It is the home of many of
the greatest French red wines. In fact in 1855 when the
classification of great French wines was instituted, the Medoc
was the focus (and only a couple of wines outside the area
were even mentioned).

Cahors is from further south - it used to be known for its
almost black wine, which was everlasting but took many years
before it was ready to drink; about 30 years ago the winemakers
figured out that if they made less concentrated more accessible
wine, they could recoup their investment much quicker, so it is
now difficult to get a Cahors that is at all ageworthy. The
recipe for Lou pastis en pott was written back in the days of
the old style wine.

Herring, apple, and cucumber salad
cat: odd, French, salad
servings: 6

3 Granny Smith apples
1 lemon, juice of
1 cucumber
6 smoked herring fillets
2 red onions
2 stalks anise
EVOO
fleur de sel
fresh ground pepper 

Salade de harengs, pommes et concombres

Rinse and dry the apples. Quarter and core them. Cut each
quarter into small dice. Toss with 1 Tb lemon juice and
set aside.

Peel the cucumber. Cut lengthwise into quarters and then
into small dice.

Peel and mince the onions.

Rinse, dry, and destem the anise, keeping only the leaves.

Mix the apple and cucumber cubes, the onion, and the
anise. Toss with the rest of the lemon juice and some
olive oil. Season. Mix well and divide among 6 bowls.

Halve the fish fillets lengthwise and then cut on the
bias into thin slices. Arrange over the salads and serve.

Wine: Alsace Pinot Blanc, well chilled
