Ah, an organic nonstick layer made of rancidized carcinogenic
fats. An idea whose time has not come.

       Title: SLOW-ROASTED BALINESE CHICKEN
  Categories: Mains, Chicken, Indonesian, Asia-se, Roast
       Yield: 6

       8    Garlic cloves
      12    Shallots- red
       1    Ginger root, 5cm
       1    Turmeric root, 2cm
       1    Galangal root, 8cm
       4 lg Chillies- red
            Vegetable oil
       2 kg Chickens
       2    Lemongrass stalks
       4    Celery stalks; leaves only
       2 tb Manis sedang
      60 ml Oyster sauce
            Sea salt
            Black pepper; ground fresh
            Banana leaf; fresh
            Foil

   Preheat oven to 150C. Peel & roughly chop garlic, onions, ginger,
   turmeric & galangal. Seed & roughly chop the chillies. Place them all in
   a food processor or blender & process to a rough paste with a little
   oil. Rub the inside & outside of the chicken with the paste.

   Mince the tender part of the lemongrass. Roughly chop the celery leaves.
   Mix with the soy & oyster sauces & place inside the chicken, refrigerate
   for at least 6 hours. Roast the chicken for 4 hours till cooked & the
   paste is golden & slightly caramelised.

   Serve with steamed rice & stir-fried Asian greens.
