  HOT DOGS Gourmets -- most of whom are your basic sissies, wimps and
  bedwetters if you ask me -- do not think much of the noble hot dog.
  They describe it, technically, as "various parts of pigs and cows,
  such as pieces of this and that, along with odds and ends, stuffed
  into lengths of something or other." Which may be true in scientific
  terms. But it misses the pure romance of the hot dog. And by romance,
  I don't mean all the significance that Freud and his friends put on
  the hot dog. I mean that to real guys, the hot dog isn't just food.
  No sir -- it's one of the most important of the basic food groups,
  right up there with chili, meatloaf, spaghetti and beer.
  
  It's the main reason for going to a baseball game, since it almost
  never happens that somebody actually gets maimed by a wild pitch. For
  real guys, the hot dog is a symbol of life. It's also a terrific feed
  even if there's nothing in the house to put on it except for some
  grape jelly. In the couch potato's kitchen, the hot dog is top dog.
  There are so many wonderful things to be said about the hot dog, that
  I just don't know where to begin. Aside from its obvious nutritional
  value -- it's just packed full of meat, filler and different kids of
  exotic salt -- it's cheap to buy, and can stay frozen in the freezer
  just about forever.
  
  It goes well with lots of other things that are easy to prepare --
  canned beans, canned chili, canned spaghetti, canned beer. Everybody
  likes it, except for gourmets and vegetarians, and who wants to be
  their friends anyway?
  
  It's fun to watch girls eat hot dogs, especially really cute girls.
  It's a great vehicle for mustard, ketchup, sauerkraut, pickle relish,
  raw onions, tomatoes, salsa, whatever the heck you want to put on it
  is okay, for the very essence of the hot dog -- its hot dogginess, as
  it were -- cannot be obscured by anything known to man.
  
  Also, it gives a great reason to eat lots of those puffy hot dog buns
  that are so good. Did you know that one of Elvis' favorite at-home
  snacks was hot dog buns with nothing on them -- he'd just such them
  down like marshmallows. Damn, but the man did know how to eat!
  
  There are, though, certain subtleties implicit in the preparation of
  the perfect hot dog. Selecting the hot dog itself is easy -- simply
  buy whatever is on sale at your local market.
  
  And if there isn't a sale on hot dogs, buy the biggest ones one the
  shelf, for there's nothing worse than settling down to eat a nice big
  red hot and running out of frankfurter before you run out of appetite.
  Or dropping a dog into a bun, and finding an awful lot of room on
  either side.
  
  Some people prefer all-beef wieners, while others like blends of beef
  and pork. Years of doggy consumption have left me with no particular
  leaning, though I do know that hot dogs made out of chicken or turkey
  (or tofu, God help us all!) are not hot dogs. I don't know what the
  heck they are, but they sure ain't fit for human consumption! Once
  you've gotten your dogs home, you can freeze them and then cook them
  at your leisure, for unlike more delicate products (like lettuce),
  freezing has not notable effect on wieners at all. But when it comes
  to cooking them, there is a major choice to be made -- to boil or to
  grill.
  
  As a rule, hot dogs microwave poorly -- they tend to blow up, making
  your microwave look like the inside of Jeffrey Dahmer's living room.
  Also, baking dries them out -- a baked hot dog looks like King Tut's
  wazoo.
  
  Myself, I go with grilling, because that gives the dogs that terrific
  woodsy, outdoor flavor, and also leaves them with those really cool
  diagonal stripes that impress people so much. If you don't have a
  grill handy, you can broil them tooch is okay, though they'll
  probably explode in flames if you do it too long. Some people fry
  them, which makes them even greasier than they are, which may be the
  point. Since hot dogs are already cooked, you don't have to cook them
  long, just until they look good and they stop being frozen.
  
  If you boil them, remember to use your fork to poke holes in the dogs,
  which keeps them from self-destructing. To me, boiled dogs taste
  soggy, but they also taste like the Sabrett's bought on the streets
  of New York, which are among the best things I've ever had in my
  mouth, outside of Heather Locklear's tongue. (Reality check: Just
  kidding!)
  
  Cooking hot dogs are basically easy. What's really important is that
  they're arranged on the plate, or in the bun. On the plate, they
  should be well accompanied, with B&M Baked Beans (spooned cold
  straight from the jar), potato salad and macaroni salad from the
  local market, chili from a can (preferably heated, if you've got
  time, or a stove), chopped raw onions and frozen French fries, cooked
  too long on a cookie sheet.
  
  If you're eating your wiener in a bun, remember to put the dog on the
  bottom, not on the top, otherwise all the other ingredients will sog
  through the bun and collapse into your lap. Remember to have lots of
  beer on hand, for hot dogs are known to increase the thirst. But
  unlike cold pizza, they're not so good for breakfast the next
  morning. Unless you feel like drinking more beer.
