There's one here in Savannah, not too far from us but we've never gone
there.  Steve found out it's got the reputation of an extended happy
hour & neithr of us are that comfortable in that sort of atmosphere.

Ostrich is good; I've had that, emu and buffalo.  It's got some super
big drumsticks if you try cooking it like a turkey or chicken however.

"Let your fingers do the walking............."  I'm sure a few phone
calls to some of the more upscale grocery stores will locate some for
you.  Try that Harry's whatever I see Alton Brown in all the time. (G)

Other than a sub made for the vermouth or sherry, it does look good as
is.  Not a lot of meat (about a quartr pound each) but you don't need
that much anyway; the dish is rich enough without more meat.
