One of my pet dislikes is air conditioning which is too hot in winter
and too cold in summer.  Some people seem to want to demonstrate the
power of their control over their environment by living an unnatural
life.   I prefer to heat or cool just enough to reduce the extremes to
achieve comfort.  The evaporative cooling system does that well.

With those extremes, you would definitely need some cooling!  (I would
need some heating in the colder coastal areas.)

A lot have already gone there.  Every winter a lot of Victorians

      Title: FILLET OF DARLING DOWNS BEEF w' PEPPERED RASPBERRY ONION
 Categories: Aussie, Beef, Restaurant
      Yield: 4 Servings
 
      4    Beef, butt fillet steaks,
           -at least 2.5cm thick,
           -trimmed of all fat
           -and sinew.
      2 tb Oil, olive
           Salt
           Pepper
      1 kg Onions, Spanish
      4 tb Vinegar, raspberry
      2 tb Peppercorns, pink
      1 c  Sugar, castor
      4 lg Leeks
      1    Sweet potato
 
  Brush the beef with olive oil and season, cover and refrigerate. Peel
  and slice the onions, place in a large saucepan with raspberry
  vinegar, remaining olive oil, peppercorns, castor sugar and cover
  with water. The onions should be cooked slowly over a moderate heat
  until the liquid is reduced by three quarters and the onion is very
  soft. Cut the leeks and sweet potato into thin straws, deep fry and
  drain on absorbant paper. Reserve for garnishing.
  
  Heat the griddle pan until just smoking, place the beef on the pan
  and cook until sealed, turn and continue cooking until medium rare
  [or to your liking]. Place the fillets on plates and spoon over the
  raspberry onions.
  
  Garnish with the mixture of deep fried leeks and sweet potato. Serve
  with seasonal vegetables.
