So a New Southerner: I hadn't guessed. We've had some old Southerners
here on the echo, and some of your posts kind of sound like that, with
your enthusiasm for foods and ways that I associate with the mid-South.
I would not have pegged you as a Californian (maybe if I met you in
person I wound, but I doubt that too).

In that recipe the prunes are there as added fiber, not for any
kind of pruny taste. Applesauce or perhaps various other high-fiber
water-trapping things (guar gum? sawdust?) would work just as well.

Chilled asparagus soup
cat: soup,lowfat
servings: 4

2 Tb olive oil
1 md sweet onion, sliced
4 c low-sodium chicken broth
2 lb asparagus, tips cut to 1", stems chopped
2 c spinach
s, p
1 tb fresh lemon juice
1 ts grated lemon zest
3 ts lowfat sour cream

Wilt onion in oil. Add broth. Bring to boil and add
asparagus stems. Cook 6 min; then add spinach and cook
3 min. Cool slightly and blend mixture in blender in
batches until smooth. Season. Cover and refrigerate
at least 2 hr.

Just before serving, parcook tips in salted water
until crisp-tender, about 3 min. Shock in cold water.

Remove soup from fridge and stir in lemon juice and zest.
Portion soup among 4 bowls. Garnish with tips and sour cream.
