We'd planned to be back for scrapple and pancakes at 10, but
when the Subaru didn't turn over at 9:20, we called AAA, who said
someone would be there within the hour. No problem, Carol told
me: last time, there was a tow truck ready almost as soon as
she'd put the phone down. Talk about jinx! Meanwhile, we got
out her "never use jumper cables again!" lighter-to-lighter
charger, which didn't work (she doesn't have jumper cables).
At quarter of, someone from the subcontractor called to say
that the truck would be there in an hour. He wasn't. Carol
called AAA again, which gave an ETA of 11:08. The truck finally
came shortly after noon. We went the quickest way and were
back at the Shipps' around 1 or a little later, hungry.

I started with my flank steak demonstration - at the Korean
market, I'd pointed out that flank was an amazing $2.99/lb,
whereupon Dale said, "isn't that a tough cut?," whereupon
I picked up a pound and a quarter to play with. Sliced it
on a severe slant, marinated it briefly in soy sauce, dredged
it in cornstarch, and into the wok it went with some slivers
of mushrooms and some scallions. I put a touch of one of
Glen's sambals, pemuda I think, on part of it. The result was
pleasantly chewy but by no means tough.

Chinese sausage demonstration - I cooked up some sausage that
I'd gotten at the Korean market, as many hadn't tried it before.
The usual versions are roast pork and fat and liver and fat;
this was roast pork and liver with other meats as well. It was
a fairly decent sausage, slightly (slightly) less fatty than
the high-priced spread. I made a plateful and distributed it
among the hungry multitude. As soon as the stuff was gone,
Dirty Dave came downstairs, so I made another batch.

The Sacerdotes and Cassie and Shirley were absent for these,
having gone to Ellicott City for a shopping expedition; I
was getting hungry and started making crabcakes (fried in a
little butter instead of broiled this time) out of the rest
of the premixed stuff left over from the previous day.

So I made more crabcakes, and miraculously, the shoppers
reappeared. Consensus was that the second day's were better
than the first. I pointed out that the spices (mostly Old Bay
and Colman's mustard) had mellowed for a day, plus I added a
tad of butter, as these were pan-fried.

Two risotti:

crab risotto with Baldo rice - Baldo is my favorite of the
risotto rices; it has a more risotto-y texture I think and
a nice fragrance. In this risotto, made with chicken broth
and a touch of tej, I folded in some small dice of green
pepper and small sliced scallions. Were it for me alone, the
small dice would probably have been Jalapeno. Also a pound
of crabmeat. This made a very subtle risotto with a nice
creamy aspect.

King oyster mushroom risotto with Roma rice - this rice
went from hard to strangely crumbly in an eyeblink. I didn't
like it as much, but some others did. This one had the same
chicken broth, lots of mushrooms, and a hint of onion. Also
a splash of tej.

Preferences were evenly divided between the risotti.

New Gewurz Gewurztraminer (California) 05 was a bitterish,
quite floral wine, just off-dry but perhaps too dry for some.
Spicy finish. I brought this because I wanted to try it.
Too bitter for risotto.
