That never happens here as we just keep one bag of each type and
don't replace it until after we've run out.

Another tip: yeast love honey. They go crazy and have little yeast
orgies. Try substituting honey for sugar to get a strong rise.


MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Cuban Bread - Pan De Cubano
 Categories: Bread, Cuban, Ethnic
      Yield: 2 loaves
 
      4 c  Bread Flour
      2 c  Potato four
      2 tb Wheat Gluten
      2 tb Yeast -OR-
      1 ea Yeast cake
      2 tb Sugar
      1 tb Salt
    1/4 c  Lard
      2 c  Lukewarm Water*
 
  *NOTE: Water temp should not exceed 110 deg-F or the yeast may be
  killed.
  
  Combine the 1st 5 ingredients, mix well then blend in lard. Add 2
  cups of lukewarm water & mix into a dough until firm. Shape dough
  by rolling into a small ball, place in a large glass or stainless
  still bowl oiled with olive oil & turn dough over until it is
  completely greased.
  
  Cover with a towel or plastic wrap & place in a warm place to
  rise. Allow to stand approx. 1/2-1 hr. or until dough is doubled
  in size.
  
  Oil 2 more bowls with olive oil then remove your dough from bowl,
  punch it down down, separate into 2 equal parts, then form them
  into form 2 balls. You must be careful not to handle too much as
  it can affect the 2nd. rising of the dough. Place each ball into a
  separate bowl, cover with a moist towel & allow to rise for
  approx. 1/2 hr.
  
  Pre-heat oven to 375 deg-F. Grease a cookie sheet Gently shape
  dough into 2 long, approx. 18"-24", loaves then place on the
  cookie sheet. Now bake for 45 mins., remove from oven, allow to
  stand for 10-15 mins. & either serve hot or wrap & store.
  
  *NOTE: Historically palm fronds were wrapped around the loaves
  before putting them into the oven. When the fronds were burned
  away the bread was done.
