Hello, All.

Sorry I haven't been around much...

I got mad at my car for breaking down and just bought a (lightly used) 2007
Saturn VUE. :)  It's got less than 8000 miles on it and we got an excellent
deal (we paid $10,000 cash down on the car as our credit isn't that good) on
it.  The car is very nice; red, light tan leather interior, heated seats, ice
cold A/C...it was a "company car" and we got a very good deal on it.  If it was
completely up to us, we'd forgo the leather and heated seats. <G>

I have a (rather dark) picture of it at http://outpostbbs.net/vue.jpg - I'll be
taking another one soon.  Work has also been keeping me busy too as we're
expanding and I've been working to take care of stuff.

On a food note: we went into Texas Roadhouse on Sunday and made the financial
mistake of ordering two 12 oz. "Dallas fillets".  They were absolutely superb
(mine was medium well, Maura's was medium rare but she said it was just a
little too rare).  Couple that with two sodas and we ran up a $72 bill in a
hurry. <G>  It was worth it, though, as the steaks were wonderful.  I was
"complaining" about the price to my boss (and good friend) who quipped, "You
just spent $10,000 on a car in cash, so what's $70?"

He had a good point.

So, come next year, we will definitely be able to travel anywhere in the US to
go to an echo picnic.  Maura likes the VUE too as it's very easy to see out of,
has a very peppy V6...and we're slowly working on building our credit to buy a
house someday.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Herbed Cheese Spread
 Categories: Spreads, Dips, Cheese/eggs
      Yield: 4 Servings
 
      1 lb Ricotta cheese or other soft
           -fresh white cheese, such as
           -fromage blanc
           Or goat cheese
    1/2 c  Snipped fresh chives
    1/4 c  Chopped fresh parsley
      3 tb Finely chopped shallots
      2 tb Chopped fresh chervil or
           -additional parsley
    3/4 c  Whipping cream, beaten to
           -soft peaks
    1/4 c  Olive oil
  1 1/2 tb White wine vinegar
    1/2 ts Salt
    1/4 ts Pepper
 
  A deliciously seasoned soft spread served as part of the cheese
  course at the restaurant Leon de Lyon in Lyons, France. Try it on
  walnut bread.
  
  Makes 4 cups.
  
  Thinly sliced french or walnut bread
  
  Using electric mixer, beat cheese with chives, parsley, shallots and
  chervil. Fold in whipped cream, oil, vinegar, salt and peper.
  Refrigerate until well chilled. (Can be prepared 1 day ahead.) Serve
  chilled with sliced bread.
