  Oh the images and memories that brought up.   I can recall a scouting
  trip in the Everglades when I found a steer's skull.  I tried to clean
  it out with fire.   What a stench!   The scout leader was not pleased,
  and it did not go home with me.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Soupe Au Pistou
 Categories: Soup, Vegetable, Herb, Prevention
      Yield: 9 Servings
 
      2 qt Water
      1 lg Onion, thinly sliced
      1    Garlic clove, sliced
      1 lg Leek, finely sliced
      3 md Carrots, sliced
      3 lg Potatoes, cubed
      2 c  Half-cooked navy beans
           Bouquet garni (celery,
           -parsley, thyme, bay leaf
           -and a piece of orange peel,
           -all tied together)
      1 c  Whole wheat elbow macaroni
  1 1/2 c  Green beans, cut into 1"
           -pieces
      2 sm Zucchini, sliced
      1    Pattypan squash, cubed
           **Pistou**
      4 lg Garlic cloves
           Pinch of cayenne pepper
    1/3 c  Packed basil leaves
      1 c  Grated Parmesan cheese
      1 md Tomato, peeled, seeded and
           -chopped
    3/4 c  Olive oil
 
  To make soup:  Boil the water in a large soup pot.  Add onion, garlic,
  leek, carrots, potatoes, beans and bouquet garni to boiling water.
  Cover and simmer for 30 minutes or until the beans are very soft but
  still holding their shape.  Add pasta and cook for 5 minutes, then
  add green beans, zucchini and pattypan squash and cook for another 12
  minutes or until the pasta is tender.

  While the soup cooks, prepare the pistou.

  To make pistou:  Puree the garlic in a food processor or mash the
  garlic in a mortar.  Combine the cayenne, basil, half the cheese and
  the tomato with the garlic and puree in a food processor or blender.
  Slowly start working in the oil and remaining cheese until a coarse
  sauce is formed. This mixture should be placed on the table so that
  each diner can stir a portion into his hot soup before eating.  Note
  that the pistou will naturally separate as it sits. Stir it from time
  to time as needed. Serves 8-10.
