      Title: Rainbow Mints
 Categories: Candies
      Yield: 36 Servings
 
      1 pk 3 oz cream cheese, softened
    1/2 ts Peppermint extract
      3 c  Powdered sugar, sifted
           Rainbow sugar (optional)
 
  In a large bowl, with an electric mixer, beat together cream cheese
  and peppermint extract.  Add powdered sugar gradually and beat until
  smooth, kneading the last of the powdered sugar in with hands.  Form
  mixture into balls the size of a cherry and roll in rainbow sugar (if
  desired). Place on waxed paper and flatten with a fork.  let stand
  overnight. Makes 3 dozen (1 inch) mints.
  
  VARIATION: Other flavored extracts can be used in this recipe.

      Title: Carless Gay's Jack Danials Bbq Sauce
 Categories: Southern, Barbecue, Sauces, Smoked
      Yield: 4 Cups
 
    1/2 lg Onion, minced
      4    Cloves garlic, minced
    3/4 c  Jack danials whiskey
      2 c  Catsup
    1/3 c  Vinegar
    1/4 c  Worcestershire sauce
    1/2 c  Packed brown sugar
    3/4 c  Molasses
    1/2 ts Black pepper
    1/2 tb Salt
    1/4 c  Tomato paste
      2 tb Liquid smoke
    1/3 ts Tabasco, or less
 
  The following is true, delicious Georgia style BBQ that you can make
  at home. Your neighbors will think you're the coolest guy in town. If
  there is anybody on this board that hasn't made them yet, you are
  depriving yourself of some very good eating.
  
  Combine onion, garlic, and Jack Danials whiskey in a 3-quart saucepan.
  Saute' until onion and garlic are translucent, approximately 10
  minutes. Remove from heat and light mixture: flame for 20 seconds.
  Add all remaining ingredients. Bring to a boil, then turn down to a
  medium simmer. Simmer 20 minutes, stirring constantly. Run sauce
  through a medium strainer to remove onion and garlic bits if you
  prefer a smoother sauce. (I don't). Cool and enjoy. Note: This sauce
  gets better with age. If time permits, keep it in the refrigerator a
  day or so to develop a deeper, richer taste. Makes 4 cups.
  
  Ribs: Wrap each slab (Beef, pork, caribou, whatever) individually in
  foil, bake at 200 degrees 5 to 7 hours. Unwrap, place on open grill
  over low heat, baste with pan drippings, then apply sauce thickly,
  turning often until small areas of sauce begin to caramelized and
  blacken. Remove from heat, cut into sections and serve. Warn your
  guests not to eat too quickly or they may actually experience
  spontaneous orgasms.
