Filipinos can come up with good, simple solutions to problems,

A particularly smelly, salty dried fish with lots of fine bones.

Sounds like a lot of trouble to make a fishy sauce.

      Title: Turkey and Kangaroo Adobo

      Yield: 6 Servings
 
      1 c  Vinegar palm
      1 kg Turkey wings
      1    Garlic head
           ;crushed
      4 sl Ginger- green
    1/2 ts Spice- black pepper
      1 lg Herb- bay leaves
      1 ts Salt
      4 tb Sauce- superior dark
    600 g  Kangaroo rump
           ;diced
           Water
           Oil for frying
 
  In a non-corrosive saucepan combine vinegar, garlic, ginger, pepper,
  bay leaf, salt and soy sauce. Put in turkey wings and kangaroo. Let
  soak overnight or even longer [I left it 30 hours], turning often.
  Add water if necessary and simmer until meat is nearly cooked, about
  3 hours. Strain sauce and set aside.
  
  Brown garlic, ginger, turkey and roo in cooking oil. Return sauce to
  saucepan, cover and simmer until sauce thickens.
  
  Serve with boiled rice.
  
  Eat with spoon and fork, (Filipino style) and fingers.
