 DS> The fries have never been limp and soggy from the Five Guys in
 DS> Laurel. They taste better that the fries at other fast food places.  

The taste, I admit, is above average if you like potato flavor,
which I don't care one way or the other about. But I've never
had a Five Guys fry that was other than limp - though those at
the one near Seven Corners weren't soggy exactly, just sort of wet.

 DS> Our reason for not always ordering them is the volume they give you
 DS> -- not that anything is wrong with them.  Perhaps you were at a place
 DS> where they let them sit for a while.  Laurel does such a turn over
 DS> that the fries are perhaps 30 seconds from frier to bag to hand.

But the best fries have sat around for a while and then are
popped into very hot (say 380F) oil long enough to brown
the exterior.

Sweet potato cheesecake
cat: dessert
servings: 16

8 oz vanilla wafers, crushed to crumbs
1/3 c melted butter
24 oz cream cheese, softened
1 c sugar
1/2 c light brown sugar
3 eggs, beaten lightly
15 oz cooked sweet potato puree (canned ok)
1/4 c heavy cream
1 Tb vanilla x
1 ts ground cinnamon
1 1/2 ts ground nutmeg
1 ts lemon juice
2 c sour cream, room temp.

Oven at 350F.

Butter and flour a 9.5-10" springform pan.

Combine wafers and butter; press into bottom of
prepared pan, extending 1" up side. Bake 12 min
and let cool.

Reduce oven to 325F.

Beat cream cheese until fluffy. Add 3/4 c sugar, the
brown sugar, and then eggs, singly, beating well.

Combine sweet potato, cream, 1 ts vanilla, spices,
and lemon juice. Add to cream cheese mixture and
beat well.

Wrap foil around the bottom and up the side of
prepared pan. Pour batter into prepared pan and
set into a larger pan. Pour 1" boiling water
into larger pan. Bake 70 min or until edges are
firm and center is just a little wobbly.

Combine sour cream, the remaining 1/4 c sugar, and
the remaining vanilla.

Remove cheesecake and pour sour cream mixture over,
spreading evenly. Return to oven and bake 10 min.

Transfer cheesecake to a rack and let cool 1 hr.
Remove foil and refrigerate cheesecake 4 hr to
overnight.
