      Title: Lightly Curried Pasta Salad
 Categories: Salads, Pasta, Curry, Dressings
      Yield: 11 servings
 
MMMMM--------------------------DRESSING-------------------------------
  2 1/2 tb Extra virgin olive oil
      2 ts Yellow curry paste *
      4 tb Distilled white or cider
           - vinegar
    3/4 c  Mayonnaise

MMMMM---------------------------SALAD--------------------------------
    1/4 c  Currants
      8 oz Small pasta (shells, elbow
           - mac, Ditalini or ziti)
    1/2 c  Fine dice red onion
  1 1/2 c  Fine dice celery
      1 c  Halved grapes (opt)
           Coarse salt and pepper
    1/2 c  Slivered almonds; toasted,
           - garnish
           Chopped parsley(opt garnish)
 
  This salad would be good served with grilled ribs, chicken, hamburgers
  and other barbecue-centric fare. For a curried chicken salad,
  substitute leftover rotisserie, grilled or roast chicken for the
  pasta. Make only half the dressing for 2 cups of boneless, skinless,
  chopped chicken; less celery and onion will be needed as well. For a
  stronger curry flavor, increase the amount of curry paste.
  
  To prepare the dressing, heat the olive oil in a small pan over medium
  heat. Add the curry paste and fry for 1 or 2 minutes, or until it
  starts to look granular and becomes aromatic. Transfer the paste and
  oil to a small bowl and let cool to room temperature. Whisk the
  vinegar and mayonnaise into the paste-oil mixture. The dressing can
  be made ahead and refrigerated. (If making the salad ahead, increase
  the dressing recipe by half. The pasta absorbs the dressing and often
  needs moistening before serving. Reserve the optional grapes to fold
  in at the last minute.)
  
  Assembly: Soak the currants in hot water until softened, about 15-30
  minutes; drain and set aside.
  
  Cook the pasta according to package directions; drain and cool. Put
  pasta in a large bowl along with the onion, celery and grapes, if
  using. Fold in the dressing; season to taste with salt and pepper.
  Garnish with toasted almonds and parsley, if using. Serve chilled or
  at room temperature.
  
  * Note: Mae Ploy, a good brand of Asian yellow curry paste, can be
  found in many Asian markets and large grocery stores.
  
  Serves 10-12
