CS> enough details to give a recipe and i think with practice, I can make
 CS> it better.

GJ> As the powder form allows you to use just the right amount instead of
GJ> being committed to use a whole can, you can do a lot of experimenting
GJ> with smaller quantities. Have fun!

I will! Don't expect a major slew of recipes with it, but a few will crop up.

CS> It's how I'm actually more familiar with using it. I'd tell you what
CS> brand my chile oil is but I can't. Writing is in what looks like Thai,
CS> with smaller characters that look Chinese. On the back (where there

GJ> Sounds like the bottle I have. I do quite a lot of stir-fried
GJ> vegetables and "stuff", so sometimes toss in a bit of the chili oil.

I do too, but not your same stir frys. Your cookery is more indonesian
influanced than mine and my stir-fry pot is again my cast iron frying pan.

GJ> OK, other kids would see that as normal, and realise that Charlotte's
GJ> mother is not completely weird.

CS> Too late! hehehe. Thats ok, as usual I'm the kind of wierd that
 CS> appeals to the kids.
 GJ>
GJ> Great for helping Charlotte to assimilate into the local community. :)

She's been assimilated (Borg voice in background).

GJ> that school have any social functions where parents meet?

CS> Grin, little group she eats with all have some odd'ish foods to add to
CS> the group from time to time. The one girl who didnt go 'ewww' and ate

GJ> Are the other kids also "military brats", who had been living with
GJ> parents on overseas postings? That could make life interesting.

Some are, about 20% I'd say are at least military families. Since most postings
are stateside, not all have had a chance to live overseas. The ones who
havent,
are jelous of the ones who have except the one kid who'd only been to Iceland
and hated it. No one is jelous of him I gather <g>.

Charlotte tells me of the kid's version, the 'cool places' are Germany, Japan,
and Greece. Uncool but you might have to suffer it are: Iceland, Scotland, and
South Africa.

 CS> can get the
CS> baby squid in tray packs of 12 at the local Asian Grocery. I note I'm
CS> calling them 'baby squid' but that is relative to Japan where you see
CS> the average ones are about 8-12 inches in body. These are 3-4 inches

GJ> Squid is pretty much a standard item in the Philippines and other SE
GJ> Asian countries as well as in the Mediterranean, so it is always
GJ> possible to get it here, fresh, frozen or dried.

I havent seen it fresh here too often, and not at all since return (seasonal)
but frozen is ok if done right.

 CS> mentioned
CS> the clandestine parent thing where we all add a bit extra to the
 CS> lunches incase
CS> one of the kids forgets so they don't have to be embarrassed and sign
CS> for a loaner lunch money. There's 10 kids at her table and Charlotte
CS> says everyone has forgotten at least once (including her) but there's
CS> always enough. I usually pack about 1.5 times what Charlotte will
CS> eat. Sometimes leftovers come back home to be tossed but more often
CS> than not, it finds a home.

GJ> With a crowd like that, I can see that no one would ever go hungry.

Nope! They never do. If I make something particularily popular, I'll put in
3 servings. In fact, Charlotte wants me to get her a bigger thermos so she can
fit more of the dashi-udon-tofu 'whatever else' soup in there. Come to think
of it, when I make that it almost looks like someone tried to lick the bottom.

GJ> Title: Gai Tom Kha #1 (Chicken in Coconut Milk Soup)

CS> Looks good but some of those things are hard to find stateside or very
 CS> expensive
CS> if you can find them. I know some workable substitutes though for
 CS> some aspects
CS> there like the kaffir lime = calamansi powder.

GJ> Yes, you soon learn what satisfactory substitutes can be made.

Sure, have quite a few for many things. I do not like lemon grass, so use
calamansi powder in it's place. Have to score me som more of that<g>.
                 xxcarol
