I was thinking of money paid in taxes and for services, or are there
ways of farmers avoiding or minimising taxes?

I have seen that sort of behaviour by tourists, and also by locals who
think that all visitors should be fluent in English, but as people
travel more, multi-lingualism is increasing.  Most people here, as in
other countries, are helpful to visitors, providing they don't act like
your "American in Paris".

Some of my friends have been there, and enjoyed the food, the music and
the people, although I saw on the news that there is still a hard core
of Fascists left in Spain.

MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Churros
 Categories: Biscuits, Spanish, Euro-w, Newsgroups, May.rec
      Yield: 4 Servings
 
           Oil
      1 c  Water
    1/2 c  Margarine or butter
      1 c  Flour
    1/4 ts Salt
      3    Eggs
           Powdered sugar
           ;or cinnamon sugar
 
  Heat oil (1 1/2 inches) to 375 degrees in 4 quart Dutch oven or deep
  saucepan.  Heat water and margarine to rolling boil in 3 quart
  saucepan. Remove from heat and quickly stir in flour and salt.  Stir
  vigorously over low heat until mixture forms a ball.  Remove from
  heat. Beat in eggs, 1 at a time, until smooth and glossy.  Spoon
  mixture into pastry bag fitted with star tip #6.  Squeeze 5 inch
  strips of dough into hot oil. Cook, turning frequently, until deep
  golden brown. Drain. Sprinkle generously with powdered sugar. Serve
  warm.
