These signs were in the public parks, etc.

      Title: Sweet Potato Fries
 Categories: Five, Potatoes
      Yield: 4 servings
 
           Peanut or other high temp
           - oil
      4 lg Sweet potatoes; peeled, in
           - 1/4" batons
           Salt
           Pn sugar
 
  The Food Department staff is divided on using sweet potatoes as french
  fries. But these sweet sticks, from Robin Davis, are sure to be a hit,
  even with traditionalists. *
  
  Pour enough oil into a large, heavy, deep pot to reach a depth of at
  least 4 inches. Heat to 275 degrees.
  
  Working in batches, fry the sweet potatoes for about 5 minutes, or
  until beginning to soften but not brown. Using a slotted spoon,
  transfer the fries to paper towels to drain. Cover and place in the
  freezer for at least 2 hours, or until completely frozen. If you are
  planning to keep them in the freezer for longer than 6 hours, pack
  them in a plastic freezer bag.
  
  Just before serving, heat the oil to 350 degrees. Working in batches,
  add the sweet potato fries to the oil and fry for about 5 minutes, or
  until golden brown. Transfer to paper towels to drain. When all the
  fries have finished cooking, season them with salt and sugar.

  * I do something VERY similar and never have leftovers. Ever.
