We did the same for years! These are much nicer and stronger, and they 
don't get troubled in the rain...and we do have a bit of that each winter!

Hmmm with only one bannana pepper I don't know if I'd call it "tangy"
but your tastes make the decision in your kitchen (grin)! I think the 
bok choy would be a good addition to the flavor profile you started.
Daikon OH yes! 
I did pretty much the same thing last night but not in the crock, just 
on the stove top. had some ham, diced it up, had some mushrooms,
sliced em, had a quarter head of cabbage, shredded it. Tossed all 
of that in a pot over medium heat with 2TBS olive oil and a pinch of 
black pepper and some leftover green beans...came out tasty good
and went well with a nice green salad! Oh tossed in about 2 TBS of 
hoisin sauce right at the end too. Anne liked it just fine!
