I usually mix beef and sausage together for my meatballs.
You can use whatever you like, Italian sweet or hot, or
as I have in the past chorizo, or pork sausage...I particularly
like Jimmy Dean hot! I usually use 1lb beef, and a half pound of 
sausage...or a 2:1 ratio at least. If I add parmesan I use the 
cheap canned kind like Kraft or store brand. More often I'll use
rolled oats as a filler as well. Eggs, yep, one or two depending 
on how the balls seem to hold together when formed. I'll often 
use diced (finely diced!) celery as well as the bell pepper. For 
herbs you have lots of choices, I'll often use dried parsely, basil
oregano, Thyme, and even rosemary, toss in whatever you like
and to the taste you desire! MSG I don't use but it wouldn't bother
me if I did! Often I will add a dash of soy sauce,or Worchestershire
as well.
