I've done without most of the stuff in my kitchen at one time or
another.  It's annoying not to have the use of a convenience after
having become accustomed to it, that's for sure.  But I can't
put my finger on any one thing and say which is the most essential.
I'd find it hard to choose between refrigeration, plumbing, and 
a stove. [g]

So intead, here's my top 5 appliances/fixtures I can do without
or wouldn't really miss all that much:

5.  Microwave.  I hardly ever use it anyway, and when I do it's
    just to heat up canned stuff or leftovers.  I loathe 
    microwave popcorn and water boiled in the microwave has 
    strange and alien properties that really screw up a pot of
    tea.  If my microwave vanished tomorrow I would shed no tear.

4.  L'il Fridge.  We have a small dorm-sized fridge in the
    utility room off the kitchen.  We keep beverages in it and
    use it for chilling puddings, jello, and salads.  It's
    handy but not essential and we did without one for years
    before I got this one at an auction (for $2, heh.)  So I
    could probably get used to not having one again if this one
    dies.

3.  KitchenAid Mixer.  Don't get me wrong - I love my KitchenAid
    and it saves me tons of work, but it's another one of those
    I-did-without-it-for-years things that I would eventually get
    used to NOT having.  Mine is a tag-sale find, too.  I would
    be deeply resentful if I had to pay full retail for one of 'em,
    because as nice as they are, they aren't worth half of what they
    sell for.

2.  Single-Use Appliances.  I have begun ridding my kitchen of
    stupid single-use appliances.  You know, stuff like the
    Salad Shooter, which is just a glorified slicer with an 
    electric motor.  I have a food processor and a hand-cranked
    shredder/slicer, why do I need a Salad Shooter?  Well, I don't.
    I also don't need a Rotato, those mechanical apple peeler
    things, handheld drink mixers that have more RPMs than a 
    Dremel tool, or electric ice crushers.  I'm keeping my Tater
    Twister, though.  That's the only single-use appliance I
    own that does something no other appliance does: It cuts
    perfect curly fries and ribbon fries, and it does thready
    cuts that can be used for potato baskets.

And number one:

1.  Dishwasher.  Just for spits and giggles, I timed myself
    doing dishes by hand and by dishwasher at my sister's place.
    It took me 15 minutes to wash, dry, and put away the dishes
    by hand after a standard 10-person sitdown meal (her family
    of three, my family of three, plus four additional guests,
    "dishes" includes washing pots, pans, and non-machineable
    stuff by hand.)  It took me the same amount of time just to 
    load the dishwasher and get it started, and then I had to 
    spend another 10 washing the pots and pans.  Then, of course
    I had to put the cleaned dishes away after the cycle stopped.
    IMO, dishwashers make more work than they eliminate.
