That's the classic morphine tolerance that, if you keep
trying to make it work, has awful effects - toxicity,
dependency, etc. The adaptability of our metabolism
sometimes has unwanted effects.

Well, you're the one who started posting weird vegan
lookalike recipes. I think here that the lentils might
be surprisingly good.

ONION RAGU WITH PENNE
cat: pasta, vegetables
serves: 6-8

1 c extra virgin olive oil
1 Tb finely chopped garlic
4 lb Spanish onions, peeled and thinly sliced
1 c scallions, sliced into 1/2" pieces
2 leeks, white and light green parts only
- halved lengthwise and thinly sliced into half-moons
1/2 c finely chopped pickled cherry peppers
1/2 c liquid from pickled cherry peppers
1 1/4 lb penne pasta
salt and freshly ground black pepper
1/2 c chopped flat-leaf parsley
1/2 c grated Parmigiano-Reggiano

In a lg heavy pot over low heat, cook garlic in olive oil just
until light golden brown. Add onions, scallions, and leeks,
and mix well. Cover and simmer until onions are very soft and
beginning to caramelize, about 1 1/2 hr.

Add cherry peppers and pickling liquid, and mix well. Cover,
and simmer for 20 min.

Cook pasta in boiling salted water until very al dente, 6-7 min.
Reserve 1-2 c of pasta water, then drain pasta well.

Season ragu to taste, and mix in the parsley. Add pasta to ragu.
Simmer pasta in ragu for 2 min, adding some pasta water if it is
too dry. To serve, arrange pasta mixture on a heated platter.
Sprinkle with Parmigiano-Reggiano to taste, and serve.
