===================================
Hi Carol!

->
-> -> cup worth). Rumor has it early meekans are about (Mandarin oranges
-> hn> pretty
-> -> much). I told her to pickup some chicken necks too if the meekans are
in
-> hn> so I
-> -> can make 'meekan chicken' (something I need to MM for the rest of you
-> hn> one day
-> -> but in short, it's mandarin oranges and chicken necks with a soy/saki
base
-> -> sauce and a small amount of fresh darkish miso).
-> ->
-> hn> Boy that one sounds sodium rich! Went to a cardiologist appt earlier t
->
-> It is, but Don will only have a little of it. It's more a Charlotte dish
sort
-> and we use the Datu puti brand soy which is 1/3 the sodium of other
brands yet
-> tastes the same. Once i MM it, you will be able to see it's not as bad
though
-> as it sounds. The Miso is just a touch for flavor.
->
Anne and I like miso quite a bit and used to add it to dishes often for the
additional depth of flavor it added...now that we've seen the sodium content
we understand why!

-> hn> week...Anne had noticed that my feet were swollen (looked like
sausage
-> hn> actually), and he could not believe that we are as low sodium as we ar
-> hn> usually stay slightly below the 2000mg/day if we are careful and seldo
-> hn> over 4000mg/day. Unfortunately, that has put miso (one of our fav's)
o
-> hn> endangered list as 1/2 cup carries a whopping 5033mg of sodium!  I
hav
-> hn> seen a low sodium version of it but I'm looking! DR put me on a "pee p
->
-> Well, grin, I would never use more than a tablespoon at a time for a 4
serving
-> dish and normally I use far less, like 1/2 that. We get it in 1/4 cup
amounts
-> and that lasts a good month for us. Still, I hadnt realized it was quite
that
-> high?
->
Yep got it straight from the nutrition book...and I was dissappointed as I like

it so much.

-> Don and I are probably a touch over the 2,000mg a day but not by far and
most
-> days probably well under that.
->
-> hn> seen a low sodium version of it but I'm looking! DR put me on a "pee p
-> hn> has me looking for a restroom if I even hear water splashing! (grin)..
->
-> LOL!
->
I'll tell you it makes for some interesting searches when the "urge" hits...and

it is NOT one to be denied for long! LOL

-> Having a taste test here, but cant really report it in any sensible way for
the
->
-> rest of you as the food we are 'testing' is all in japanese labels. We saw
a
-> new brand of noodlebowls and got 5 new flavors. One is a definate
keeper, with
->
-> a dark green cover and a fried-dried tofu cake inside with little pink
flower
-> shapes in the seasoning packet. Dashi based seasoning. Definately good
in a
-> totally Japanese way of seasonings, would probably not sell well to the
mass
-> American audience but in any asian store, would do well. 88 yen each.
->
-> We havent tried the pink one yet (cover is pink) but I suspect from the
picture
->
-> that it is based on octopus and shrimp? The green bits the picture shows
-> floating are either something kale like, or seaweed.
->
sounds YYuuuuuummmy!

-> Don doesnt eat these as we cant tell the sodium content, but Charlotte
loves
-> them. Call it the spagettios of Japan for a fast kid-fix.
->
-> Don likes Udon though and we can tell generally what the sodium level is
for
-> them or we replace the seasoning packet with our own fixings. Try this
idea
-> out if you like udon? 1 teaspoon sesame oil or if you have it, same
amount of
-> rendered chicken fat (something we always have handy here). Add as
much 'MS
-> Dash' as you like (1/2 teaspoon is about right) and a 'pinch' of dried red
-> chile pepper (we use the jar of Korean stuff). Then add 1 cup liquid (we
-> normally use dashi here but vegetable broth or chicken broth will work). If

we
->
-> have only water around, we add a small 'squizzle' of Patis (1/4 teaspoon?)
and
-> keep in mind our Patis is from the Philipennes so is 1/2 or less the sodium
of
-> the ones others here seem to mention. That 1/4 teaspoon is about 50mg
sodium.
->
-> Sometimes i use 1/4 teaspoon miso instead but gather now that would be
200mg or
->
-> so sodium? (I estimate high deliberately as it makes me overall lower in
-> habits if I over estimate that way).
->
I like udon and ramen dishes, but I replace the flavor packets entirely with my

own. I'll add frozen corn or peas to the noodles, bits of dried shrimp or ham
or
even sliced hot dog..(that's where most of the sodium would get into the
recipe) I add to the bowl I'm going to put the noodles and broth into: sesame
oil, sriracha, seaweed flakes, mrs dash, chile flakes, lemon zest, a dash of
soy
or worchestershire sauce, and a bit of whatever is in the fridge.
chat with you soon
