It's a really dessert sort of like a cross between pudding and jell-o.

Sauerkraut is close enough to Kimchee to not seem all that weird, I guess. 
Fermented cabbage with vinegar is fermented cabbage with vinegar.

They'll never show up here then, especially if they're a local fruit.  Some
asian fruits and veggies are grown around here now, but some of the
exotics... forget it.

Yep.  I've demolished my share of apricots.  They're smaller than peaches,
with a fuzzy skin.

Apricots have "stone"  seeds like peaches, and the kernels are edible if
you roast them.  People have been known to sub them for almonds.
