But there is process to be taken into account. After all,

To what extent are the specifications specific? Do they
extend to, say, speed of dissolving and of uptake into
the blood stream?

Why would it, I wonder. Anyhow, if it's the CH3 half rather
than the COOH half, then wouldn't all acetate products have
this effect? I know that there have been some mineral
supplements that are formulated in acetate form to ease
absorption, and would they have done this, I wonder, if the
incidence of stomach upset were substantial.

Roast chestnut puree

2 lb chestnuts
4 oz butter
2 c  chicken broth; unsalted
4 oz cream
     ;s to taste

Puncture the skin of each chestnut, otherwise there is the
danger of explosion.

Oven at 450.

Roast the chestnuts until almost tender, about 45 min.

Shell chestnuts. Saute in butter briefly; then add broth
and cook, covered, until tender.

Run through a blender or food mill, adding cream to smooth.

Season to taste.
