Ärende: Cranberry sauce
=======================
On 07-06-06 DAVE SACERDOTE Scribbled to DALE SHIPP about Cranberry sauce

DS>DSh> one that is rounded on one end. We used to open
DS>DSh> both ends and push out a nice rounded lump of jellied
DS>DSh> cranberry sauce. Now we have to dig it out of the can
DS>DSh> and hope that we don't mash it up in the process!

DS>Do you have an icepick in your kitchen? Or just a clean phillips
DS>screwdriver?

DS>1. Open the regular end of the cranberry sauce.

DS>2. Hold the opened can upside down over the serving plate/bowl.

DS>3. With your other hand, sharply stab the center of the rounded
DS> end of the can, piercing the thin metal there. Pull the
DS> screwdriver out of the wound, leaving a hole. You can make
DS> more than one hole if you like.

DS>4. Give the cranberry sauce a short, rapid shake. Air will enter
DS> through the hole and the cranberry sauce will exit the opened
DS> end in a nice rounded cylinder.

DS>This method also works with canned hash, dog food, and other solidly-
DS>packed canned foods. Not so good for tomato paste, though, which
DS>sticks. We've been doing it that way for a long time.

I have a long thin metal spatula whose original purpose was to spread
creemcheez or butter, I think. I slip in down the side of the and run it
around the circumference, allowing air in to break the surface
attraction between the innards and the can. Works especially well with
jellied cranberry sauce - since the blade of the spatula is long enough
to get to the bottom of a standard 16 oz can - with room to spare.

I've not used it on dog (or cat) food. But, it works a treat on hash,
bean w/bacon soup, etc.

      Title: Texas Caviar
 Categories: Beans, Party
      Yield: 16 servings

2 c Black eyed peas (fresh cooked
           -or canned)
      1 tb Olive oil
1 sm Can of chopped green chiles
        ds Cayenne pepper or your
           -favorite hot sauce
      2 tb Minced onion
      2 tb Minced celery
      2 tb Apple cider vinegar
    1/4 ts Salt
           Fresh ground black pepper
      1 tb Fresh cilantro; minced,
           -(more to taste)
      2 Plum tomatoes; seeded and
           -diced

Always popular at a party, Texas Caviar (with its black eyed
peas) will make for good fortune if eaten on New Year's Day.

Drain peas, rinse with cold water and drain again.

Combine olive oil, chiles, cayenne, onion, celery, vinegar,
salt and pepper, and mix well. Pour over peas and stir
gently. Refrigerate for several hours or overnight.

At serving time, add chopped tomatoes and cilantro, and mix
  carefully.

Note: Be sure your peas, onion and celery contain as little
water as possible. Texas Caviar is chunky -- not soupy.
