Understood.  We're actually a lot closer on this issue than it seems
at first blush.  Especially since this:

...was brilliantly unclear.  I should have written thus:

I strongly support the concept of giving people the tools they 
need to make decisions based on their own needs and desires.  
That's not the same as cutting the safety lines and letting them
drift, though.  I'm not THAT libertarian.

Bland ol' American cheese isn't for everybody, but like I said,
McDonald's just uses bland ol' American cheese.  Really, there's
nothing funny going on there.  It's not my favorite either (in 
fact, I HATE American cheese on sandwiches.) But it's just a 
meh-mild cheddar when one comes right down to it.

[Makes me wonder, though, if there would be enough demand for
Mickey D's to allow the customer to specify the type of cheese:
I know I'd definitely try a cheeseburger with Provolone or Swiss
at the local Arches.]

McDonald's does seem to put have something done to their cheese
to make it smoother when melted, but chilled in slices, it still
behaves like American cheese.

Anecdote:

Back in high school, my stepfather would pull us out of school
every autumn for Vermont's deer bowhunting season.  We'd spend
a little over a week camping in the woods; we had to bring in 
everything (it wasn't a campground - we had permission from a 
local farmer to camp at the edge of a gone-feral apple orchard
at the end of a two-mile tote road in Chelsea.

One of my stepfather's friends was a manager for a local
McDonalds, and he'd raid the cooler for supplies every year.
We had cases of sausage patties, quarter-pounder patties, 
eggs, cheese, and English muffins.  

The cheese came in big, deli-sized five-pound bricks.  They were
pre-sliced for better portion control, and they were labeled
"American Cheese" with the McDonald's logo and "Made exclusively
for McDonald's" etc.
