Also the timing of pies and cakes.

And prior experience with old fashioned wood stoves. (It would be easy
to test at home in the yard with a probe thermometer.)

The temperature will vary somewhat with the amount and type of wood
used and the height and size of the box.

  Servings: 6

    1.2 l  Chicken stock, or vegetable
           stock (2 pints)
      8    Leeks, trimmed, washed
           chopped 2 cm pieces
   1.25 kg Green or Savoy cabbage (2
    1/2    lb)
      1 lg Onion, finely sliced
           Salt and freshly ground
           black pepper
           Garnish:
      6 sl Toast each cut into 12
           squares, optional
     75 g  Cheddar cheese, grated,
           optional (3 oz)

When not on shift, Welsh miners enjoyed working in the open air on their
allotments or cottage gardens. Almost all grew leeks and cabbages, so
this fresh green soup could almost be called 'Miner's Soup'. In fact, it
is also made on Welsh farms and in manor houses, while the townie buys
the vegetables and makes it in the same way.

Remove hard stalks and outer leaves of cabbage and chop into 2 cm
pieces.

In a large saucepan, bring the stock to the boil.

Drop in all the vegetables.

Bring back to the boil, then cover and simmer for 45 minutes, stirring
occasionally.

Add salt and pepper to taste.

Ladle into 6 bowls, allowing enough vegetables in each to show just
above the surface of the liquid.

The soup can be served just as it is, or each bowl can be garnished with
12 squares of toast, sprinkled with 15g grated cheddar cheese.
