 rules carefully (or someone would catch them).

MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Dirty Rice
 Categories: Cajun, Rice
      Yield: 4 servings
 
      2 tb Flour
      2 tb Vegetable oil
      1 c  Chopped onions
      1 c  Chopped celery
    1/2 c  Chopped green pepper
      2    Cloves garlic, minced
    1/2 lb Lean ground beef
    1/2 lb Lean ground pork
    1/2    Chicken giblets, chopped
      2 ts Salt
    1/2 ts Ground black pepper
    1/2 ts Ground red pepper
      1 c  Chicken broth or water
      3 c  Hot cooked rice
      1 c  Sliced green onion tops
 
  In Dutch oven or large skillet (preferably iron) brown flour in oil
  until it is deep red-brown, stirring constantly to prevent burning.
  Add onions, celery, green pepper, and garlic. Cook until vegetables
  are tender. Stir in beef, pork, giblets, and seasonings. Continue
  cooking until meat loses its color. Blend in broth; cover and simmer
  25 minutes. Stir in rice and onion tops. Cook 5 minutes longer.
  Mixture should be slightly moist.
  
  Makes 6 servings.
  
  Nutrition
  
  Each serving provides 367 calories, 22 grams protein, 18 gram fat, 29
  grams carbohydrate, 1 gram dietary fiber, 153 milligram cholesterol
  and 1017 milligrams sodium.
